This vegan carrot and potato mash is creamy, dreamy, and only a few ingredients! Here’s how I whipped 'em up:
2-3 yellow potatoes (that’s what I had on hand)
2-4 large carrots, peeled
2 tbsp garlic oil + a couple confit garlic cloves (find that recipe here [link])
A splash of unsweetened vegan cream (I used an organic coconut/almond blend)
Salt and pepper
Boil potatoes and carrots together until fork tender. Then, mash the potatoes, carrots, and all other ingredients together with a potato masher or very lightly pulse with an emulsion blender. If you choose to blend, do so sparingly; blending potatoes too much will give them an elastic-y texture when they should be fluffy.
To serve, you could top these with fleur de sel, some fresh herbs, or your favorite gravy.
