Big Salad Energy right here. This is the "I'm ready for Spring" salad, the "Transitioning seasons" salad, or the "I need to use up my veggies quick!" salad.



It includes:

Bib lettuce

Purple kale

Bell pepper

Sweet corn

Grape tomatoes

Orange slices

2 sliced hard boiled eggs


Other suggested add-ons:

Tuna

Goat cheese

Kalamata olives

Avocado

Anchovies


I’ll be dressing this one with a blend of lemon juice or apple cider vinegar, EVOO, course salt, and a little black pepper.
