Sour Pickled Mustard Greens with Bean Curd Sticks and Edamame

If you’ve never had sour pickled mustard greens this is your sign to go buy some asap. With their naturally tangy salty punch, you don’t need to add much to round out this refreshing dish.

Ingredients should be measured and incorporated to your liking. Always taste as you go!

Here’s what I included:

Sour pickled mustard greens (you can find this at most Asian grocery stores)

Bean curd sheets/sticks (another Asian grocery store find)

Edamame, shelled, unsalted

Sesame oil

Sesame seeds (lightly toast for an even deeper flavor)

Optional: small pinch of sugar

Directions:

Cut the mustard greens and bean curd sticks into bite sized pieces--about 1/2 to 3/4 of an inch big. Add the edamame, some sesame oil to coat, an optional pinch of white sugar or monk fruit sweetener, and top with sesame seeds. Stir everything together until evenly distributed and enjoy!
