Ingredients:
Eggplant, halved
Olive oil
Pine nuts, lightly toasted
Crumbled feta cheese
Mint, chiffonade
S&P
Yogurt Ingredients:
Greek yogurt
Olive oil
Lemon juice
Mint
Cilantro
Zaatar
S&P
Directions:
For the yogurt, combine all yogurt ingredients in a food processor until smooth. Easy peasy!
For the eggplant, halve the eggplant and remove the rough ends. Place on a baking sheet and brush with olive oil and a little salt. You can also add any other spices you like!
Place in the oven at around 400-420 degrees for about 30-40 minutes depending on the size of the eggplant. Once cooked completely, top with yogurt, toasted pine nuts, crumbled feta, mint, and finish with black pepper and coarse salt.
