Tried my hand at some king oyster mushroom “scallops”. I've seen this trend going around TikTok a lot in the last couple months and it seemed like a great vegetarian or vegan alternative to scallops. I used butter in the video, but you could easily sub olive oil instead to make the recipe vegan. They tasted incredible and really only needed a little salt and garlic, but you could also add any herbs to this-- just cook them as you would scallops! They probably needed 2-3 minutes on each side. Even the texture is similar—so so tender with a little bounce to the bite. See the video below for how I chose to make mine!
