Food Hack: Shrimp and Sautéed Green Pepper Dumplings with Chili Oil, Black Vinegar, and Soy Sauce

These are a hack, but you’d never know looking at the picture, or even from the flavor. Instead of creating a raw, flavorful filling to wrap within the dumpling wrapper, I achieved the same juicy dumpling flavor by using... LEFTOVERS! And layering condiments on top. You can and should add whatever leftovers you like, but here's what I had on hand:

Ingredients:

1 cup leftover cooked shrimp and sautéed bell pepper (cooked with garlic and ginger powder).

1/4 cup scallions

Dumpling wrappers

Black vinegar

Soy sauce

Chili oil or Lao Gan Ma

Directions:

Chop your leftovers and scallions until you achieve a small dice, and fold into dumpling wrappers. Fry or steam the dumplings until the wrapper is fully cooked. Drizzle condiments and top with any other herbs or veggies you like and thats literally it!!

Next time you shy away from making dumplings, take a peak inside your fridge and I’m sure you’ll find something to fill a dumpling in a pinch (scrambled eggs, edamame, scallions or chives are another favorite combo that you can whip up in no time!). These took me a total of about 15 mins, truly.
