If you know me you know I love to keep quick, flavorful condiments around to add to seafood, salads, wraps, potatoes....really anything. This Mexican staple can be easily customizable, but here's what I added:
3 ripe tomatoes, diced
1 jalapeño, brunoise (you can also use serrano peppers)
1/2 small white onion, small dice
1 tbsp lime juice (adding extra lime juice can also help preserve it a little bit longer!)
1 clove garlic, minced
A bundle of chopped cilantro
Salt and pepper
Combine all ingredients, then let sit for 10-20 mins before enjoying so all the flavors can meld together.
As an added bonus, I often like to add corn for extra sweetness!
