
Want a filling sweet snack on the go? These protein bites are high in good fats, protein, and clean, healthy carbs. Depending on how you like 'em, you can boost up on the protein or fat contents by adding more protein powder, nut butters, or other seeds.
Ingredients
1 cup old fashioned rolled oats
2 tbsp Trader Joe’s super seed and ancient grain blend (any seeds will do! I just looove this blend!)
2 servings of your preferred protein powder
2-4 medjool dates (these will help give your bars a fudge-y consistency)
1 tbsp unsweetened coconut shavings
1 tsp cacao powder (reserve a little less than half to powder on at the end)
¾ tbsp coconut oil or coconut butter
⅛ cup unsweetened almond milk (or other liquid to achieve a smoother consistency. Can add more nut butter or coconut oil for a higher fat option)
2 chocolate squares (I used 2 Ghirardelli 72% cacao squares)
Optional additional ingredients:
A dash of almond extract
Other dried fruit
½ tsp sweetener (I use Lakanto monkfruit sweetener but you can use maple syrup, honey, or other clean sugar sub)
Jam/jelly to layer on top
Directions:
Combine all ingredients EXCEPT the chocolate in a food processor and mix until it becomes a thick paste. Press the paste into a pan and freeze for 10-20 mins. Meanwhile, place the chocolate squares in a separate bowl, and place that bowl in a bowl of hot water. Make sure the hot water doesn't spill over into the smaller bowl of chocolate. Stir chocolate until melted*. Remove the bars from the freezer and drizzle chocolate on top**. Apply a dusting of cacao powder on top. Cut into 9 squares, remove from pan, and enjoy!
*Alternatively, microwave the chocolate until melted
**In place of/in addition to chocolate, you can try adding a layer of your favorite jam!
